CHAMBERLAIN’S RESTAURANTS

On opening Chamberlain’s Steak & Chop House in 1993, Richard Chamberlain, took to heart the stale cuisine of his native state. The specialty of the house, prime steak, has the bold flavors for which Chamberlain’s reputation has been built. Shortly after opening, Chamberlain’s Steak and Chop House was named one of the country’s top new restaurants of 1993 by Bon Appetite magazine.  Gourmet rated them “One of America’s Top TablesTexas Monthly named Chamberlain’s one of the “Top 10 Steakhouses” in the state and “Best Steak House for Epicures.”  The accolades have continued for a very successful 21 years.

 

Prior to opening his own place, Chamberlain spent three years as the executive chef of the exclusive Little Nell Hotel in Aspen, Colorado where he received national attention for pioneering American Alpine Cooking.  The Little Nell restaurant was ranked among the top ten in the United States.  Because of his deliciously innovative combinations of traditional European alpine cooking with American tastes of today, the James Beard Foundation nominated Chamberlain in 1992 for “The Best Chef in the Northwest” award.

From 1986-1989 Chamberlain served as executive chef of San Simeon Restaurant in Dallas.  During his tenure at San Simeon, his refinement of American Regional Cuisine earned him the distinction of being selected as one of the “Rising Stars to Watch” by Food & Wine Magazine.  In addition, Chamberlain also served as executive sous chef at the Hotel Bel-Air in Los Angeles, and worked under Dean Fearing at the critically acclaimed Mansion on Turtle Creek.

In 1996 Jeff Barker joined the Chop House as general manager. Together they formed an expert team that evolved into Chamberlains Restaurants and in August of 2001, they opened, Chamberlain’s Fish Market Grill.  Relying on some of the world’s finest seafood, the restaurant has been revered as “Best Seafood Restaurant in Dallas” by Dallas Observer, a “Top Ten New Restaurant of 2001” by Jim White’s KRLD Restaurant Show, and D Magazine proclaimed, “Exquisitely prepared seafood and steaks.”  AOL City Guide and Citysearch name them “Best Seafood” in 2007.

Additionally, Richard has consulted in concept design and opened Elk Mountain Resort near Telluride, Colorado, and Envy Steakhouse in Las Vegas, Nevada.  In August 2006, Envy was named “Best New Off-Strip Restaurant in Las Vegas” by Las Vegas Life. 

Richard released a cookbook in 2006, titled “The Healthy Beef Cookbook” in which he partnered with the National Cattleman’s Beef Association and The American Dietetic Association with co-author Betsy Hornick, M.S., R.D.  He has been featured several times on NBC’s Today Show, CBS Early Show and Fox TV, Fox and Friends.

Twenty-one years later, Chamberlain’s Restaurants are still independently owned and operated and among some of Dallas’ most respected restaurants.  In 2013 Chamberlain’s Restaurants saw their highest sales and profits in Chamberlain’s Steak and Chop House, Chamberlain’s Fish Market Grill.

Chamberlain is a board member of the American Heart Association and has been  the lead chef for their largest fund raiser, Cotes du Coeur, for 18 years.  In that time over $8 million dollars has been raised. He is also involved with the March of Dimes, Boys & Girls Club, Ride to Recovery, and the USO to name a few.

Richard and his wife Lisa live in North Dallas and have been married for 25 years. Their daughter Tori is a elementary school teacher and recent graduate of the University of Oklahoma and son Stephen attends SMU.
