Executive Chef

As executive chef, Dan Landsberg leads all kitchen operations as well as inspires the planning and direction of seasonal cooking on the Dragonfly menu.

 

Chef Landsberg began his career in Sacramento, Calif., as a line-cook at Mace’s Restaurant and was eventually promoted to sous chef. He then joined Fog City Diner in San Francisco while completing culinary school at California Culinary Academy. He joined the Dallas operation of Fog City Diner, and went on to open the Las Vegas operation as sous chef.

 

In 1996, Landsberg returned to the Dallas market opening Toscana Restaurant and was later promoted to chef de cuisine. He continued to grow his career as corporate executive chef at the Wynnwood Hospitality family of companies including Bistral, Seventeen Seventeen Restaurant, Atrium Café and Wynnwood Catering and Special Events.

 

In October 2005, Landsberg was the opening executive chef for Stephan Pyles Restaurant, collaborating with Chef-Owner Stephan Pyles. Landsberg developed and implemented all kitchen systems including special events and cooking schools. The restaurant was awarded a five-star opening review by The Dallas Morning News.

 

Prior to joining Hotel ZaZa Landsberg served as the executive chef, director of operations, and partner at Tillman’s Roadhouse in Dallas and Fort Worth, Texas, where he rebranded the restaurant and received a number of awards including: “Best New Restaurant in Dallas” by D Magazine, “Top Ten Dining Locations for Groups” by OpenTable.com, and “Top 10 Places That Make Your Mouth Water” by Texas Monthly.
